Are you having a super Wednesday? The week is half over and we have such a treat for you! Our fabulous guests from the Small Fry blog are back, and sharing a treat that is so easy, you will hardly believe it! Check this out:
In honor of Cinco de Mayo just around the corner we decided to whip up a very quick & easy batch of Churro Chips for our kids!
What we loved most about this recipe (that we made up on the fly) is that all the ingredients we had on hand & the kids went ape over this sugary delight.
Enjoy!
Ingredients: Oil for frying (we use light tasting olive oil)
Uncooked Tortillas (we get ours from Costco)
1/2 C Sugar & 2 T Cinnamon for mixture
Directions: Pour oil in to a large cast iron skillet about 1/4 inch up the side of the pan. Set stove to medium-high heat. Take a small stack of tortillas and cut into one inch strips. With a small piece of tortilla, test the oil’s heat by dropping it into the pan. If the tortilla immediately starts to fry the oil is ready. Carefully drop the tortilla strips into the oil without overlapping. Fry for about a minute per side, flipping with tongs. Remove from the oil and let drain briefly on a paper towel.
Sprinkle generously with cinnamon sugar.

What a great use for left-over tortillas. When I buy flour tortillas, I always have left-over ones and they sit in the refrigerator until I use them or get tired of seeing them and toss them in the compost, but this is fantastic! Thanks.
