Award winning chili – that even a child can make!
When ever I start to cook or bake my children run into the kitchen and take over. Sometimes I love it; like when I am not in a hurry, and sometimes it is a little annoying–like when it is 7 pm and dinner hasn’t been served. I remember cooking and learning from my mother. She would cook everything. I came from a big family so we rarely would eat out. One of my favorites was when my mom would make fried chicken and mash potatoes. Now I am not going to lie I can cook pretty well now, but when I left the home it was a little scary. It was mostly grilled cheese and cereal. But when I had kids I learned pretty fast the crock pot was my best friend.
I moved into a new house about two years ago around Halloween time. My church was having a Halloween party and chili cook off. I wanted to do something different. So I used my sister’s famous white chili recipe that is always a big hit. Brag Alert….I won for best white chili. I was so excited because I had never won anything for my cooking. I owed it all to my sister and my crockpot.
This recipe is also great for your kids. My kids love to put it in the crockpot and it is one of their favorite dinners with some 7 up biscuits. (That recipe can be found all over Pinterest)
Grocery List
1 can White navy or canneli beans
1 can chickpeas
1 can white corn
1-2 cans of chicken broth
1 cup cooked wild rice
1 small can diced green chilies
1/2 cup chopped onions
1/4 tsp. garlic powder
1 1/2 tsp. cumin
1 rotisserie chicken
Cilantro for garnish
Monterey Jack cheese and sour cream for garnish
Now this is the fun part for your kids. Lets begin.
Let your kids open all the cans if they are old enough and dump all the ingredients into the crockpot. The only thing that I wait to put in until the last hour is the cooked wild rice. I like to wait on that.
The first rule for cooking in my kitchen is wash your hands. The second is pull your hair back. We forgot to pull Lyla’s hair back because we were taking pictures. Oops. The third rule is everyone takes turns so there is no fighting. You don’t want to get kicked out of the kitchen.
The great thing about this recipe is you can make it vegetarian too. Just minus the chicken and add vegetable broth.
Cumin really makes this chili perfect.
I don’t like to eat very many left overs but I can eat this white chili for days. I think it actually tastes better the next day.
I like to buy extra chicken broth and add more to make sure all the ingredients is covered with broth before I put the lid on.
Let it cook in the crockpot for 3-4 hours.

I sometimes eat it with tortilla chips too. I can’t wait for you to try this I know you will love it. This time of year is my favorite. I love all the traditions that my mother passed down to me and that I get to pass them down to my children. I know as women we try to do too much. Remember less is more and that your kids appreciate the smaller things like cooking with them and spending time together. They will cherish those memories forever.
