This week, I had a friend that was struggling with her health.
I always like to take meals to people because no matter what you’re facing, eating is necessary, and no one LOVES to cook dinner ALL the time.
One of my go-to “take to a friend” dinners is this Italian Tortellini Soup. It’s flavorful, filling, and just warms your soul!
I was able to order my items at walmart.com, and do a quick grocery pick up after taking a kid to practice.
They have everything I needed and by purchasing items from Walmart’s private labeled lines, I was able to save even more moolah!
Side note before I forget: I grabbed paper bowls. If you ever take a meal, TAKE PAPER PRODUCTS. I know it’s not the most environmentally friendly idea, but when someone is sick, they don’t want to do dishes. I feel it’s such a helpful option!
Italian Tortellini Soup
INGREDIENTS:
1 lb of ground Italian Sausage
2 Zucchinis
1 onion
chopped garlic
2 cans of Italian diced tomatoes
2 family size boxes of chicken broth (approx.)
1 bag of frozen cheese tortellini pasta
salt and Italian seasoning
Shredded parmesan cheese
DIRECTIONS
1. Brown the Italian sausage. Drain the grease and set aside.
2. Chop up 2 zucchinis and an onion.
3. Saute zucchinis and onion, and 2 TB diced garlic in olive oil until softened. I usually do this in a dutch oven pot.
3. Add 1-2 cans of Italian diced tomatoes (I like 2 cans.).
4. Add chicken broth. I usually just eyeball this, but when I’m making a big batch, I usually use 2 family size boxes of chicken broth.
5. Add Italian Sausage.
6. Add salt and Italian seasoning to taste.
7. Let simmer for about 15 minutes so flavors can mix.
8. Add a bag of frozen tortellini and bring mixture to a boil. Simmer for another 10-15 minutes.
9. Top with a pinch of parmesan cheese and serve!
It really is a DIVINE soup that my whole family will eat! It’s just yummy!
We served it with these “new to us” garlic knots that were like something they’d serve at a restaurant!
Such buttery garlicky goodness!
I also am ALWAYS very sure to add some sweet treats.
That is, assuming I can hide them long enough for my 3 year old not to snag first!
And of course you’ll need some energy while you’re cooking!!
