Banana Nut muffins are a little taste of my childhood.
Spoil your family with a delicious breakfast muffin or lunch time snack and they’ll be adding these to their memory banks, too!
One of my ‘secret’ recipes that I often impress overnight guests with is my homemade {sorta} banana muffin recipe. Beats any ‘box’ out there by a long shot and is basically just as easy.
Wanna know the secret ingredient? Bisquick. Bisquick is the secret. Grab your box and let’s make some muffins!
Ingredients
- 4 Medium Mashed Bananas
- 3 T Vegetable Oil
- 1 Large Egg
- 1/3 C Sugar
- 2 C Bisquick Baking Mix
- ½ C chopped nuts {if desired}
- 1/2 C chocolate chips {if desired}
Instructions

Heat oven to 400. Paper line or grease a 12 muffin tin.

Beat bananas, oil, egg and sugar in large bowl until well blended. Stir in baking mix, nuts, and chocolate chips just until baking mix is moistened (batter will be lumpy). Divide batter into muffin tin.

Bake about 15 minutes or until golden brown.4. Cool muffins in pan 5 minutes; remove from pan to wire rack. Serve warm {and with milk please} 😉

FYI – Ripe bananas freeze well. Mash, adding 1 T lemon juice for each cup of banana to prevent them from darkening. For this recipe, freeze in 2 cup quantities
