Learn how to make this delicious apple spice cake with brown sugar frosting
Summer is gone and the nights are getting colder.
I don’t know about you but this time of year I crave anything and everything apple flavored. Especially this favorite family recipe, Apple Spice Cake with brown sugar frosting. Not a September goes by without a road trip to my favorite apple orchard. It’s perched high on a mountain top and each week a new variety of apple is ready to be picked. I’ll bring home a jug of fresh apple cider and a giant bag of apples and eat them for weeks.
What I can’t eat, I’ll make into the most delicious desserts. I’m a good friend to have, come fall. This apple spice cake recipe uses a comfortable combination of ingredients but the frosting really takes the cake. Brown sugar and butter are a deliriously happy couple.
Tart, dry apples like the Granny Smith work best when baking.
I like to mix in a little sweetness so I added in a Pink Lady as well. Other varieties that work well are the Braeburn, Jonagold, Crispin, Rome, Jonathan and of course the queen of all apple varieties, the Honeycrisp.
This Apple Spice Cake is simple to assemble. I like to bake it in 9-inch rounds and layer the frosting but a bundt cake pan would work as well. The cooking time would just need to be adjusted to allow it to bake through to the deeper center.

- Cake:
- 1 cup white sugar
- 1 cup brown sugar packed
- 1/2 cup butter softened
- 2 eggs
- 1 cup peeled chopped apples
- 1 cup chopped pecans
- 1 tsp. alt
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1 tsp. cloves
- 2 tsp. baking soda
- 2 cups flour
- 2 cups apple sauce
- Frosting:
- 1/3 cup butter softened
- 3/4 cup brown sugar packed
- 1/8 tsp. tsp. salt
- 1 tsp. tsp. vanilla
- 4 Tbsp Milk
- 3 cups powdered sugar
- Preheat oven to 350 degrees. Butter 2 9-inch round pans and line the bottoms with parchment. Then butter parchment and flour pans. Cream butter and sugar, add eggs and beat well. Add apples and nuts. Sift dry ingredients and add alternately with applesauce to butter and sugar, starting and ending with the flour mixture. Pour into prepared pans and bake for 30 minutes or until done. (Toothpick inserted comes out clean.) Invert onto a cooling rack immediately and remove parchment paper. Let cool completely before frosting. To make the frosting, cream together the butter and brown sugar. Add salt, vanilla and milk. Mix well. Slowly add powdered sugar and mix until fluffy.
