Dough Tricks:
This will be a sticky dough. This is what you want as you don’t want to have a dry bread base.

Remove the dough and place into a butter coated bowl and also brush the surface of the dough with melted butter as well. Be sure to cover the bowl with plastic wrap for the hour that it is supposed to rise.

Look at that beautiful dough!

This time I wanted to make four smaller focaccia loaves, so I separated the dough into four even pieces. Cast iron is the best way to bake focaccia bread as it gives a nice, even back and a beautiful crust. Don’t have a cast iron skillet? Here’s one of my favorites!

Once the dough is stretched evenly in the baking dish, coat it with more melted butter and cover with plastic wrap again for the next hour. And what is a Christmas focaccia recipe without all of the festive ingredients of the holidays?

Ingredients
- Bread Ingredients:
- 2 cups warm water
- 2 tsp yeast
- 2 tsp Himalayan sea salt
- ½ cup coconut sugar
- 1 cup melted butter (separated)
- 2 large eggs
- 6 cups all-purpose flour
- Topping ingredients:
- 1 can of cranberry sauce (with whole cranberries)
- Crumbled goat cheese
- Fresh rosemary
- Fresh thyme
- Pinch of Himalayan sea salt
- Celery seed
- Marjoram
- Rubbed sage
Instructions
Bread Directions:
Dissolve the yeast and salt in the warm water.
Add in the coconut sugar and one ½ cup of the melted butter along with ½ a cup of flour and the two eggs. Mix well. Start to gradually add in the rest of the flour to
the mixing bowl until completely combined. This dough will be very sticky. Remove
the dough from the mixing bowl and coat with some of the extra butter. Coat the
mixing bowl with some of the extra butter as well. Return the dough to the butter
coated bowl and cover with plastic wrap. Let sit for 1 hour. This will make 4
small focaccia bread loafs, or 2 mediums loafs depending on the pan you are
using. Once the hour has passed separate the dough into either four or two sections.
And place into butter coated prepared baking dishes. Press the dough evenly into
the pan until the bottom is covered. Be sure that you recoat the dough with
more of the butter. Recover with plastic wrap and let sit for another hour. Once
the last hour of rising is done carefully press your fingers into the dough to create
the familiar focaccia bread look. Now it is time for the toppings!
Topping Directions:
Sprinkled on an amount of each of the toppings generously
and evenly to your preferred taste. I was generous with the herbs for mine and
it tasted AMAZING! Be sure to not leave any dough without the herbs on it.
Bake at 400 degrees for 20 minutes. Remove from oven and let
cool till it is warm. Serve and enjoy!
*this dough freezes well, if you want to make it ahead of
time or if you want to save some of the dough for later.*
