Ice Cream Sandwich Cake for Summer Parties
Ice cream sandwich cake is an easy ice cream cake recipe that is a summer ice cream delight. With so many fun summer parties and birthdays quickly approaching, I couldn’t pass up the chance to share one of my favorite treats! This is one of the most customizable delicious ice cream cakes around and it only takes a few minutes to throw together! My mouth is watering just thinking about it!
Oreo Cookie Ice Cream Cake
Ingredients:
24 ice cream sandwiches
12 oz – whipped topping
fudge topping
caramel topping
1 pkg Oreos **
4 Skor bars **
** you can use anything else in place of the Oreos and Skor bars. Any candy bar, cookie dough, stuffed cookies, nuts…you name it! My personal favorite is Reeses, Peanut Butter, and Chocolate Shell Topping! A layer of peanut butter on top of those ice cream sandwiches plus Reeses drizzled with Chocolate Shell over the whipped topping, it’s TO DIE FOR!
Grab a 9 x 13 pan and let’s get started!
Unwrap and place a layer of ice cream sandwiches on the bottom of the pan. You’ll use about 12 per layer.
Then spread half the container of whipped topping on the ice cream sandwiches.
Next, crumble Oreos and drizzle caramel and chocolate over the whipped topping.
And REPEAT!
First, another layer of ice cream sandwiches
Then spread with whipped topping
Once more, crumble Oreos AND Skor bars, then drizzle with toppings!
Finally, lick your fingers! Grab a sheet of tin foil then cover the top and throw it in the freezer till you’re ready to indulge!

We do something similar called Cinder Cake. My grandma use to make it. Recipe: 1 pkg oreo’s crushed with 1/2 cube melted butter. Put on bottom of 9×13 pan. Save some to sprinkle on top. Then open a box of icecream (really any flavor) cut into slices to lay across oreos. Then spread a container of cool whip over the ice cream. Then drizzle Hershey’s syrup over the top and add the extra oreos. Freeze. YUMMM!!! I’m excited to try yours. I LOVE HEATH bars and my husband loves OREO’s!! Thanks for the recipe.

This was an awesome find! I was looking for something quick and easy for my daughter’s 12th birthday, as she wanted ice cream cake as it’s summer now. As I am in Australia, I substituted with whipped cream as we don’t have whipped topping. We had 10 girls over so 4 layers of 3, 12 bars were ample. So easy my daughter made it, held the extra toppings (too sweet) and covered it with crushed oreos and fresh raspberries on top! 🙂
