One of my ‘secret’ recipes that I often impress overnight guests with is my homemade {sorta} banana muffin recipe. Beats any ‘box’ out there by a long shot and is basically just as easy.
Bisquick is the secret.
Do you have a little helper that loves to mash, mash, mash? I do! 🙂
Add a few simple ingredients,…
and in minutes…
Ready to serve…
Wait Mr! Not yet!…Okay, now.One Happy family.
- Heat oven to 400. Paper line or grease a 12 muffin tin.
- Beat bananas, oil, egg and sugar in large bowl until well blended. Stir in baking mix, nuts, and chocolate chips just until baking mix is moistened (batter will be lumpy). Divide batter into muffin tin.
- Bake about 15 minutes or until golden brown. Cool muffins in pan 5 minutes; remove from pan to wire rack. Serve warm {and with milk please} 😉
FYI – Ripe bananas freeze well. Mash, adding 1 T lemon juice for each cup of banana to prevent them from darkening. For this recipe, freeze in 2 cup quantities

I’ve been noticing that Shelley, the amazing Kitchen Designer, is the one doing most of the cooking posts. You ARE an amazing cook! (You must have learned in from your mother.) something I tried just a few days ago – I sprayed the inside of muffin papers with cooking spray, and no more chunks of muffin got stuck in the paper!

these were so easy, I made them as a last minute activity with the kids. I didn’t have chocolate chips so I used peanut butter chips. I added a squeeze of chocolate syrup and flax seed mill. They were great! thanks

Hi, love your site. Its very inspiring and so full of good stuff. Love your post on the Banana-nut muffins and I am downright tempted to make this right away. I live in Mumbai, India and Bisquick is not available here. What is a good substitute that will give me similar results as the one above? Yummy! Just found this site/recipe! Question – can these be frozen? and if so, any tricks? IF/WHEN I bake, I usually make it an all day event, but since there’s only 2 us at home, the baked goods need to be able to be pulled out of the freezer —

Me and my 6 yr old daughter used this recipe, but we changed up a few things (i have a habit of experimenting!). Instead of sugar we used 1/3 cup honey. Instead of chocolate chips, we used peanut butter chips. And instead of nuts we used 1/2 dry oats.
They turned out GREAT!!
