Now on to one of my family’s favorite Saturday morning breakfasts…cinnamon roll pancakes with homemade buttermilk syrup!
Our Favorite Saturday Morning Breakfast: Cinnamon Roll Pancakes
This yummy breakfast is like a cinnamon roll and a pancake had a baby. And they’re so fun to make too! Watch this video to get a better idea:
And with this homemade buttermilk syrup drizzled all over and topped with whipped cream and a sprinkle of cinnamon, this is breakfast heaven.
Ingredients
- 1 cup milk
- 3 TB white vinegar
- 1-1/2 cups flour
- 3 TB sugar
- 1-1/2 tsp baking powder
- 3/4 tsp baking soda
- 3/4 tsp salt
- 2 eggs
- 3 TB melted butter
- Cooking spray
- For cinnamon swirl:
- 4 TB melted butter
- 6 TB brown sugar
- 1/2 TB cinnamon
Instructions
- Makes 6 servings
- In a small bottle (must be able to squirt), combine the cinnamon swirl ingredients: melted butter, brown sugar, and cinnamon. Mix well and set aside.
- Combine milk and vinegar and set aside for 5 minutes until sour.
- Combine dry ingredients in a bowl and whisk together.
- Add wet ingredients and whisk until smooth.
- Spray a skillet or griddle with nonstick cooking spray. Pour 1/4 cupfuls of batter onto the griddle. Next, swirl the cinnamon mixture onto the fresh batter in a "cinnamon roll" pattern. Flip when ready.
- Serve with warm syrup, whipped cream, and a sprinkle of cinnamon on top!
Some tips on getting the swirl just right:
These pancakes are really easy…you literally can’t screw them up. Basically, you can use any pancake recipe, or even cheat and use the box kind! (Don’t worry, I do it all the time!)
The most important part is the cinnamon swirl so just make sure to nail that. Your cinnamon mixture needs to be nice and warm so that you can easily squirt it from the bottle.
You may need to pop the cinnamon mixture into the microwave for a few seconds from time to time to make sure it stays warm and viscous. Not too liquid, not too thick.
I grabbed a few of these bottles at the dollar store, but you can find them about anywhere. They actually come in handy a lot! If you don’t have one, you can try using a clean ketchup bottle.
