This is the time of year when you realize you may have planted one too many zucchini plants and now your garden is overrun with them. I didn’t have a garden this year, but luckily I have some great neighbors who have been pleading with me to take some off their hands. Reluctantly I help them out. But what to DO with all of them? We had a great discussion on our facebook page, and I was blown away and inspired by all the different things you can make with zucchini. Including this amazing cheesy zucchini recipe!
Amazing Cheesy Zucchini Recipe
Allow me to share one of my families favorite zucchini dishes. It’s called Zucchini and Cheese (’nuff said). It’s probably the EASIEST recipe known to man. Best part? My hubby likes to play chef and makes it all the time! No complaints there.
Step 1: Put about a teaspoon of butter into your frying pan (use more or less depending on the amount of zucchini you cook). Next, grate your zucchini into the pan and cook at a medium temperature.
Stir occasionally. Not sure if this step is necessary, but it always seems like the right thing to do… ha.
Your zucchini will get all soft and mushy. That’s good! Time for the next step.
Step 2: Add the cheese. In our family’s case, that means a lot of cheese, but add however much you prefer. My daughter just see’s the cheese and forgets about the “green stuff”. I know, tricky.
For extra flavor, we also like to add, diced jalapenos, sausages, and onion flakes. Mmm. Feel free to experiment with different toppings.
Step 3: Serve and enjoy. This cheesy zucchini recipe is great by itself, or as a side dish.
That’s it! I know you may be laughing because of how simple this recipe is, (yes, I am calling it a recipe). I love it because I can feel like supermom for a brief moment because dinner can be done in 12.6 minutes.

We just use plain old cheddar, but I’m sure other kinds would be good as well. 🙂

One of my favorite zucchini recipes is fried zucchini. It’s pretty easy. Just peel a zucchini and slice into smaller pieces/rounds. First take a frying pan and fill with a bit of oil. Heat the frying pan on medium high. Next, take out three bowls and fill one with flour, another with Italian breadcrumbs and the last with an egg that has been whipped and mixed with a little bit of milk. Then, take each zucchini piece and toss in the flour, then into the egg mixture and finally into the breadcrumb bowl. Afterwards immediately place in a frying pan and fry until golden brown. Salt lightly and enjoy!

Sounds yummy! Recently I cut it in thin rounds, put it in a bowl with some olive oil, garlic, Italian seasoning, parmesan cheese, tossed it and then bake it until golden, yum!

I tried this last night and loved it! Just a note on the recipe: My zucchini is always exceptionally watery after I fry it like that, so I added about 2 T. seasoned bread crumbs. Or you could just drain it if it gets to watery. Thanks for the great, east, yummy idea! I”ll be experimenting with several variations over the next couple weeks as my zucchini plants continue to produce amply!

i’m happily making this for the fourth time! My husband loves it. I sprinkle onion and garlic powder along with a shake of red pepper flakes and it’s ready and really yummy in no time! Now to figure out how to get him to cook it like your DH does! Thanks for this recipe!
