This is my ABSOLUTE FAVORITE summer drink!
I even had it served at my wedding reception!
{It was a big hit, I tell ya!…the drink…and the reception! haha. My relatives still call my mom for the recipe!}
It has since turned into our traditional 4th of July barbecue drink, and since Monday was the 4th…we made some! And here’s how you can make some too…
Delicious Cucumber Drink
INGREDIENTS:
1 to 1.5 large cucumbers
1 whole bag of crushed ice
1 can (12 oz.) frozen/slightly thawed limeade
2 liter bottle of 7up/Sprite/Fresca (choose your favorite, or the one that’s on sale 🙂 )
A bowl/pitcher (or both) large enough to fit a whole bag of crushed ice + the other ingredients. (As you can probably tell, this makes way over 2 liters of drink, especially after the ice melts some. Makes this drink perfect for any party!)
To Begin:
Leave the cucumber peel on and slice in thin slices…
Line the bottom of the bowl with the sliced cucumber pieces. (The thinner the slice, the better it sticks to the sides).
Add the whole bag of crushed ice…
Add the limeade…
Pour the 2 liter bottle of soda over the limeade…
Let the concoction set/melt for 1 hour before serving. Stir a little before serving to make sure the flavors get mixed around.
Transfer into a pitcher for easy pouring or leave in punch bowl and add a ladle for self-serve style.

How long will this keep? Could I make the ice/cucumber/limeade mixture and add fresca to each drink?

Hm. That’s a good question. I don’t see why not! You might have to play with ratio or mixture to fresca a bit.. 🙂

A store near me sells cucumber water which is just cucumber flavored water. It isn’t sweet, but it is very refreshing. It was great on my throat when I had strep throat over Easter. BUT, enough about me….I can’t wait to try this recipe. It looks delish! Thanks for sharing!

Sounds so good! How big of an ice bag was it that you used? I have some leftover ice in my freezer…but want to make sure I get the right ratios. Thanks for sharing!

I’ve realized that the smaller bags of cubed ice is better. Especially if it’s sitting out for a while…it won’t get as watered down as fast. Hope that helps!

We call this beauty “Cucumber Suprise”. I love how refreshing the cucumber makes this drink taste. Yummm. Will have to make this soon.

I made this but did not have time to let the drink sit so I but the cucumbers in hot water for 3 minutes before mixing in the ice. I wanted to try and to help release some of the cucumber flavor right away. It is great alone and even better if you add Gin!

I used crushed ice from my freezer,. I’d like to know how many cups of crushed ice does this take? I just made it and now waiting for it to thaw… I’m hoping it turns out tasty, but, worried my amounts are off.
