  1. Drain pineapple, reserving about 3 tbsp juice Set pineapple aside. Set juice aside for frosting.
  2. In a bowl, cream butter and sugar.
  3. Add egg, mix well.
  4. Add pineapple and vanilla, mix well.
  5. Combine flour, baking powder, baking soda, and salt.
  6. Sift dry ingredients into creamed mixture.
  7. Drop by tsp 2″ apart on greased cookie sheet.
  8. Bake at 325° for 15-18 minutes. – Do not over bake!
  9. Remove and cool on wire racks.
  10. Frosting — Combine powdered sugar with just enough reserved juice to get a smooth spread.
  11. Put the frosting in a small ziplock baggie and drizzle over cooled cookies.
  12. Serve!
