I always come across the most delightful main dishes to serve for supper – I’ve got a pinterest board FULL of them! But it seems like I spend so much time focused on the main dish, that I almost ALWAYS neglect any kind of side dish. If I’m super focused, my kids might get some of that bagged salad thrown on the side. That’s on a good day. Can you relate? I’m about to become your best friend. I found a recipe that is one of the easiest, quickest, and tastiest side dishes I’ve ever eaten. The best part is – you probably already have most, if not all, of the elements of this recipe already in your kitchen. If you don’t – it’s crazy easy to substitute with what you’ve got. I’m all about easy. I’m also all about mushrooms – so this is pretty much the best thing ever. Let me introduce you, my good friends, to this amazing (and super easy peasy) Lemon & Red Pepper BAKED mushrooms.
This recipe comes together in under 20 minutes – and only takes a minute to prep. Bonus! Mushrooms are cheap and this dish has all of the deliciousness of stuffed potatoes with only a fraction of the prep time. Gotta love that.
Here is what you’ll need:
- Mushrooms (about 3-4 cups), sliced. I buy mine sliced. It’s easy and why not let someone else do the work? Also, I can often find packages of sliced mushrooms in the discount section of the grocery store. This makes this dish so inexpensive.
- 3 Tbsp Olive Oil (don’t have it? Use vegetable oil – but seriously, go buy yourself some olive oil. You’re welcome)
- 3/4 cup shredded parmesan. I happened to have a mixture of parmesan, romano, and asiago left over from my vegetable tian dish, so I used that.
- Zest and juice from 1 lemon (don’t have? Substitute with about 1/8 – 1/4 cup bottled lemon juice, and a tbsp of your favorite lemon seasoning such as lemon pepper or lemon and herb.)
- 3-4 cloves garlic, minced
- 1 tsp dried thyme
- 1/4 tsp dried pepper flakes
- salt and pepper to taste
*If you don’t have any of these seasonings, or if you prefer other flavors instead – experiment. It’s okay! Try some roasted red pepper and garlic seasoning, some cajun seasoning or more. Have fun with this!
Directions:
- Preheat oven to 400°F
- Spray a 9X13 baking pan with non-stick spray
- Toss all of the ingredients together in a bowl.
- Pour into the baking pan.

5. Pop the pan (uncovered) in the oven and bake for 13-15 minutes. You can stir once during baking, if you’d like. I like to turn on the broiler for the last couple of minutes to get that nice golden brown.
6. Serve immediately!!
For real, I wish we had smellivision, or aroma-web or something. It smells A-MAZING!!!

Easy Peasy Lemon & Red Pepper Baked Mushrooms
Ingredients
- 3-4 cups sliced mushrooms
- 3/4 cup parmesan
- 3-4 tbsp olive oil
- zest and juice of 1 lemon
- 3-4 cloves garlic, minced
- 1 tsp dried thyme
- 1/4 tsp dried pepper flakes
- salt and pepper to taste
Instructions
- Preheat oven to 400°F
- Spray a 9X13 baking dish with cooking spray
- Toss all ingredients in a bowl to coat
- Bake for 13-15 minutes, with the last minute under the broiler
- Serve!
