While I didn’t make specific food related goals for the New Year, I do plan to continue trying to eat healthy, whole foods as much as possible. However, after all the holiday sweets I allowed myself to indulge in last month, I am returning to my healthy meal routine with a renewed vigor!
This lightly sweet and crunchy Winter Citrus Salad satisfies my sweet tooth in a guilt-free way that Pumpkin Pie could never do! It is delicious and you can eat it knowing that you are filling up on fresh fruits, veggies, and nuts packed with nutrition.
Citrus fruits also offer some incredible health benefits. In addition to being one of the best ways to load up on Vitamin C, citrus can also help reduce stress, fight weight gain, and prevent cancer.
Best of all, this time of year is the easiest time to get delicious, quality citrus fruits.
This salad comes together easily. It makes a perfect side dish for a dinner of chicken or fish. You can also add a cup of chopped rotisserie chicken to the salad and it makes a very filling lunch too!
The ingredients are also flexible. You can use a mixture of whatever citrus you have on hand. I used grapefruit and clementines, but any kind of citrus will taste good. You can also mix other greens in with the spinach leaves, like red leaf lettuce or romaine for more variety.
Just a few minutes at the cutting board and you will have all the makings of a delicious, nutritious salad to accompany your meal!
